Pineapple Ribs Glaze

Sweet and Savory come together in this perfect combination marinade for ribs.

Ingredients
6 lb. pork baby back ribs (approx. 2 racks)

Marinade:
3 tbsp. brown sugar
1 tbsp. kosher salt
1 tbsp garlic finely minced
1 tbsp. olive oil
1 1/2 tbsp. cider vinegar
1/2 cup fresh chopped cilantro
1 chili pepper flakes to taste

Glaze:
3 1/2 cups pineapple juice
1/4 tsp red pepper flakes (to taste)
1 cup mirin or sake
3 tbsp brown sugar
2 tbsp rice vinegar

Directions:

  1. Combine all marinade ingredients. Stir to combine. Rub the mixture onto the ribs. Place in a pan or large freezer bag and marinate for 12-24 hours.
  2. Place all glaze ingredients in a medium saucepan and bring to a boil. Reduce heat to a medium simmer and simmer 1 hour or until thick.
  3. Line a baking sheet with parchment paper and the marinated ribs. Divide the glaze in half and brush on the ribs.
  4. Bake ribs in a 350-degree oven for about 2 hours. Basting with the last half of the glaze during the last 15 minutes of cooking.
  5. Brush with additional glaze after finished.
